This is another recipe created for my favourite fish company, BigFish Brand who produce all of their products in my hometown of Grimsby. Designed to be cooked in a hurry, their whole range of salmon and trout fillets can be thrown into the microwave and cooked in around 4 minutes! A small range of their products are available to buy online at Ocado and can be found all over the UK in lots of independently run Farm Shops.
1 bag fresh Brussel Sprouts, halved
1 tin Chickpeas, drained, rinsed and dried
1 tbsp Olive Oil
1 tsp Paprika
3 cloves Garlic
Sea Salt and Pepper to season
Pre heat oven to 190ºc
Place the sprouts, chickpeas, oil, whole garlic cloves, paprika, in a plastic bag with a pinch of salt and pepper. Seal the bag and gently shake until everything is covered with the seasoning and oil and place into a roasting tin
Remove all packaging from the salmon fillets and loosely wrap in lightly oiled tin foil. Place into a separate roasting tin before placing both tins in the oven and cooking for 35-40 minutes until the sprouts have started to golden around the edges.
